As Director of Wine, you will be the creative, strategic and operational force behind all wine experiences at Cambridge House. From cellar to service, list curation to guest engagement, you will set the standard for how wine is selected, presented and enjoyed throughout the hotel. You will be a visible presence on the floor, a trusted partner to our chefs and our team members - bringing confidence, generosity and depth of knowledge to everything you do. Key Responsibilities:
Maintain a visible, hands-on presence on the floor, engaging directly with guests and the team. Offer tailored recommendations, host table-side conversations and create memorable experiences through knowledge, warmth and intuitive service, acting as a trusted ambassador for the wine programme and Cambridge House.
Curate, develop and manage all wine offerings across the property, including restaurants, bars, private dining spaces and in-room selections. Balance discovery, classic benchmarks and approachability, ensuring lists are commercially viable while remaining expressive and relevant.
Create, articulate and continuously evolve a distinctive wine vision for Cambridge House that reflects the spirit of the hotel. Ensure the wine programme enhances the overall guest experience and brand identity.
Build strong, thoughtful relationships with wine growers, producers and suppliers, with a focus on quality and provenance. Oversee purchasing strategy and supplier negotiations, managing allocations, contracts and pricing to maximise value, secure exclusive opportunities and maintain consistency.
Collaborate closely with the Executive Chef and culinary team to create thoughtful food and wine pairings, supporting menu development, tastings and special events that drive guest engagement and revenue.
Combine an active floor presence with detailed analysis of sales performance, guest preferences and market trends, using insights to inform buying decisions, list evolution and targeted promotional activity.
Lead on financial aspects of the wine programme, including forecasting, budgeting and cost control. Set and manage wine cost targets, margins and pricing strategies, ensuring strong commercial performance while protecting quality and value.
Maintain rigorous cellar management practices, including inventory control, stock rotation, vintage management, breakage control and accurate stock reporting. Conduct regular audits and implement systems to minimise wastage and variance.
Lead wine education across the hotel, designing and delivering structured training programmes that build confidence, product knowledge and storytelling skills. Set and uphold service standards so wine service feels natural, informed and generous.
Mentor and inspire the wine and wider service teams, creating a culture of curiosity, pride and accountability. Support career development and succession planning within the wine function.
Contribute to the opening strategy and ongoing evolution of Cambridge House, contributing to operational planning, brand positioning and the development of a collaborative, high-performance culture rooted in care, consistency and excellence.
Proven experience in a senior wine role within a luxury hotel or fine dining environment, ideally in London.
Deep, current wine knowledge with a broad international perspective and a genuine enthusiasm for sharing it.
Demonstrates exceptional guest service skills with warmth, professionalism, and meticulous attention to detail.
A natural leader who enjoys developing team members and setting standards through example.
Commercially astute, with strong experience managing budgets, suppliers and inventory at scale.
Calm, considered and confident in high-pressure environments, particularly during openings.
Approachable in style, articulate in communication and deeply guest-focused.
WSET Diploma, Master Sommelier or equivalent experience highly regarded.
